DISCOVER WHERE THE
WORLD'S FIRST ORGANIC CAVIAR IS PRODUCED

Riofrío is a small hamlet within the municipality of Loja in the province of Granada. A quiet village in the Guadalquivir basin, for many years it was home to the native species Acipenser naccarii (also known as ‘sollo’ or Adriatic sturgeon). The Riofrío facilities were created by a Spanish pioneer of aquaculture, Dr. Domezain, who located the unique conditions and natural environment for sturgeon farming. Loja, the city which is home to this sturgeon breeding centre, lies at a similar latitude to the southern Caspian Sea, with the added advantage that it gets the same amount of sunlight as that area of the Middle East. This means that the water does not have to be heated artificially; thanks to the natural flow of the water, pumping methods are also not required. These conditions make for theoptimal breeding of sturgeons in captivity. A tour of Riofrío's facilities is a memorable experience, allowing you to learn about the entire process and life cycle of the sturgeon, as well as the production of our excellent caviar.
