ELABORATION
Cold vatting in a Ganymede tank, bleeding of 5% of the must and cold maceration for 2 to 3 days. The alcoholic fermentation is carried out with the greatest of controls, but always respecting the fruit, extracting thanks to this technology, color and aroma, as well as a ripe and soft tannin. After 10 days in contact with the skins, the wine is devatted by gravity and the wines undergo malolactic fermentation in subway cement tanks.
The Garnacha variety ferments in small truncated cone-shaped steel tanks, with controlled temperature and continuous pumping over after an 8% bleed. Aged for 18 months in American oak barrels from 1 to 3 years of age with a light toasting in the body of the barrel and medium toasting at the bottom. Garnacha: Aged for 16 months in American oak casks of an average age of 2 years. In this case the bottoms of the barrels are untoasted to preserve more of the fresh fruit notes.
TASTING NOTES
Clean and very bright cherry red color. Intense nose with pronounced presence of red fruit mixed with sweet notes from the barrel. Red licorice and plum are assembled with cocoa and a light background of toast. Smooth entry on the palate, structured and round. Polished tannic intensity that combines with its natural acidity and makes it very present. Long with a clear aftertaste of red fruit and a background of sweet notes from high quality wood.
