PRODUCTION AND AGEING
Vinified as a white wine. Gentle pressing and settling of the must for twelve hours. Fermented at a controlled temperature of 28ºC. Aged in American oak barrels following the traditional system of soleras and criaderas. This process is favoured by the particular microclimate of el Puerto de Santa María, where our wineries are located, with moderate temperatures and levels of humidity throughout the year.
