ELABORATION:
Once the ideal harvest time has been chosen for the red variety, it is harvested first thing in the morning and cold macerated with the skins for 2 hours and then bled, obtaining a must with a beautiful bright pink color. The white tempranillo variety is also harvested early in the morning, macerated separately with the skins and after a day at 8ºC, it goes to a small capacity press where we obtain a low pressure yolk must that joins with the red tempranillo to begin the fermentation process without exceeding 15ºC. to respect the aromas as much as possible. The wine is racked from the stainless steel tanks to raw cement where it remains with its lees for two months with constant movement to provide greater volume in the mouth, and finally bottled to preserve all the fresh fruit, pink color and balanced acidity.
TASTE:
Elegant pale pink color with bluish iridescence. The olfactory phase is characterized by fresh red fruit, freesia and hints of jelly beans. After aeration, notes of pastry and minerals appear. Complex and surprising. The palate is aromatic and fresh. Again with an explosion of very fragrant fruit with a silky and long finish.
ORIGEN:
Rioja Alta vineyards, where freshness and fruit is the predominant note, are harvested in the early hours to preserve the best possible aroma. Both varieties are harvested and vatted separately in the winery. With the red variety it is vital to control ripening in the field to achieve a controlled alcohol content, balanced acidity and fresh fruit aromas.
