ELABORATION:
Tempranillo: 7% of the must is bled off. Pre-fermentative maceration with the skins takes place over three days. Alcoholic fermentation was carried out at 26ºC, with controlled pumping-over and post-fermentative maceration with the skins for 24 days. Devatting by gravity. Malolactic fermentation took place in underground cement tanks. Mazuelo: Alcoholic fermentation in small stainless steel tanks, with prior bleeding of 10% of the must. Devatting by gravity. Malolactic fermentation took place in underground cement tanks. Tempranillo: Aged for 25 months in medium-toast mixed oak barrels (80% French and 20% American oak). Mazuelo: Aged for 20 months in lightly toasted French oak barrels. After final blending, the wine rests in bottle for at least three years before its release.
TASTING NOTES:
Bright ruby red with medium-high intensity and a very smooth texture when swirled. Intense aromas of ripe red fruit and aromatic herbs. An elegant bouquet that perfectly combines spicy notes with hints of vanilla and a background of cherry liqueur. This wine has a powerful entry and is elegant on the palate. It offers good structure and velvety tannins. The aftertaste reveals roasted notes, vanilla and touches of resinous oils, under predominant notes of red fruits. A long and persistent finish.
ORIGIN:
The Tempranillo vineyards are located in Fuenmayor, Cuzcurrita, Huércanos and Hormilla. On average 30 years old, dry-farmed and bush-trained. Different types of soil, mainly calcareous-clay and low in organic matter. The Mazuelo vineyard is located in Medrano. Bush-trained vines, over 50 years old, planted in sandy soil with a higher concentration of organic matter and good drainage.
