One of the species that we raise ecologically in Riofrío is Naccarii, the "Spanish Osetra" because of its superior roe size. It is a sturgeon native to the Mediterranean area. Our Essence recipe has a lower salt content, so its flavor is more delicate and its texture is smoother. It is the closest thing to freshly extracted caviar. It is the perfect caviar to taste ""À la Royale"".
