Coquinero Fino en Rama
Coquinero Fino en Rama

Coquinero Fino en Rama

The truly unique character of Coquinero is the result of the legacy of a biological ageing process, with the delicate character of a fino with prolonged ageing. This wine owes its name to natives of Puerto de Santa María known as "Coquineros", paying homage to their hard work in search of small shellfish or “coquinas”.

The laborious process behind the production and ageing of this sherry is what inspired its name. It pays homage to the hard work of the local shellfish gatherers, who have long dedicated themselves to harvesting the famous regional delicacy of Puerto de Santa Maria. Coquinero is a precursor to the sherry wines that are currently in fashion: “What's old is new again”. Fino fortified as it used to be up to 17º (the maximum allowed by the regulatory council) which is at the limit of what is "legal".

PRODUCTION AND AGEING
The entire collection of butts is divided into 115 butts across 6 scales. The Palomino grapes are harvested by hand. Pressing is followed by alcoholic fermentation at a controlled temperature of 24ºC. Once the wine has reached 11-12% vol., it is fortified to 15.5% vol. It then undergoes at least six and a half years of biological ageing in a dynamic system of criaderas and solera under a yeast layer before being drawn off. Fortified up to 17% vol. and bottled unfiltered.

TASTING NOTES
Appearance: Straw gold colour, with amber reflections.
Nose: Intensely floral yeast, sharp but complex, with notes of apricot, ocean aromas and delicate herbal touches, green apple and hazelnuts.
Palate: dry, sharp, bitter notes, with good structure and a long saline finish with hints of seawater and toasted almonds.
Serving temperature: 8ºC-10ºC
