1857 marked a key moment in the history of the Duff-Gordon company. The company, managed by Thomas Osborne's widow, Aurora Böhl y Larrea (daughter of the writer Frasquita Larrea and the German consul in Cadiz, Juan Nicolas Böhl de Fáber and sister of the author Fernán Caballero,) expanded the business by acquiring several winery and cooperage buildings, including La Honda. What did Aurora see in these soleras? Were they special wines? They could have been poorly fortified wines that biological ageing helped refine, making them more delicate. On the other hand, during the 1910s, the solera was made up of 10 scales, when very old and very strong finos were sold. However, as consumers began to demand sherries with a milder palate, the company decided to launch a new fino extracted from the fifth scale of Fino Honda, thus giving rise to our Fino Quinta, Bodegas Osborne's flagship sherry.

PRODUCTION AND AGEING
The entire collection of butts is divided into 198 butts in 8 scales. The Palomino grapes are harvested by hand and used to produce the base wine. Fortification to 15.5% vol., biological ageing for 12 years in the solera and criaderas system. In recent years, some of the yeast layer has naturally decayed, with small amounts of oxygen coming into contact with the wine, allowing for a minor degree of oxidation to take place. There is also a final concentration from the evaporation of water (16º).

TASTING NOTES
Appearance: deep gold colour with amber highlights.
Nose: Notes of floral yeast attenuated by intense notes of oxidation, very complex. Notes of toasted caramel, with hints of marzipan, saltpetre, almonds, hazelnuts and ground nuts.
Palate: Dry and full-bodied at first sip, with a touch of salinity. Powerful on the palate, long and creamy with notes of hardwood. A citrus finish, with a long and intense nutty aftertaste. Serving temperature: 8ºC-10ºC.
