PRODUCTION AND AGEING
Soil: Chalky-clay.
Climate: this wine is favoured by the particular microclimate of el Puerto de Santa María, where our wineries are located, with moderate temperatures and levels of humidity throughout the year.
Winemaking: The grapes are transported to the winery in crates to avoid any damage before the reach the press. They are vinified as for white wines. Gentle pressing, the must is settled for twelve hours and fermented at a controlled temperature of 25ºC. Aged in the traditional system of soleras and criaderas in American oak barrels.
