Gentle pressing and racking of the must for 12 hours, and subsequent fermentation at a controlled temperature of 25°C. Initially aged like a “fino" wine for 4.5 years under the veil of the “flor”, the natural yeast protection which prevents oxidation of the wine throughout the ageing process and gives it very special organoleptic characteristics. It is then fortified, by removing the yeast protection and allowing the wine to continue with oxidation ageing for the next two years. The ageing takes place using the traditional system of “Criaderas and Soleras” in American oak casks. The result is a very special wine which retains the characteristics typical of “fino” wines.
A pale gold color, very clean and bright. In the nose, sharp, fresh and complex. Delicate aromas of green apple and notes of hazelnut. Very elegant. Dry, refreshing and smooth in the mouth. Good structure with a prolonged, slightly bitter hazelnut finish.
As a general rule, in well-ventilated places, away from sources of heat. Once opened, keep in the refrigerator.
Before meals, as an aperitif and in a tasting glass. A perfect accompaniment for all types of seafood, tapas and cured cheeses. Serve chilled between 8-12°C.
