The Solaz vineyards are located outside the town of Malpica del Tajo (Toledo), within the boundaries of the Protected Geographical Indication (PGI)of Vinos de la Tierra de Castilla. This is the largest family-owned single-estate vineyard in the whole of Europe: 736ha of vines over a total area of 1000ha, divided across 64 parcels and eight varieties. Two mountain ranges and the Tajo river determine the landscape of the estate. The sun shines throughout most of the year and the nights are cool, the soil rich in minerals, the ideal conditions for vine growing.
The grapes that go into this blend were harvested first thing in the morning in order to pick them at the lowest possible temperature. Once crushed and destalked they were transferred to tanks where they macerated for several hours to attain their characteristic colour. Once this is achieved, the must is bled off into a tank where it settles naturally. It ferments at 16ºC with the addition of selected yeasts.Once this process is completed, it is stabilised and bottled. Estate-owned vineyards, bottled in the winery.
Appearance: Bright, it has a very subtle hue of pale pink with raspberry highlights. Aroma and flavour: Sweet, fruity aromas of strawberry stand out on the nose, with notes of white flowers over a refreshing background. Pleasantly sweet on the palate with well-balanced acidity bringing cheery freshness.
FOOD PAIRINGS AND SERVING SUGGESTIONS
A great accompaniment to seafood, pasta, salads, fish and as an aperitif. Serving temperature: 7 to 10ºC.
