Shoulder ham is made from a selection of the very best pure-bred, free-range Iberian pigs raised in the Spanish meadows. Iberian pigs are cared for diligently throughout their lives. After a critical salting phase, the shoulder ham begins a long and delicate curing process in the natural curing cellars of Sánchez Romero Carvajal in Jabugo.
The microclimate of the area offers perfect conditions for this rigorous curing phase. The natural cellars are located in the Sierra de Aracena and the Picos de Aroche Natural Park. This privileged location contributes to the colour, aroma and flavour of the ham throughout the 18-month curing process.
