Morcón Cinco Jotas
Like all Cinco Jotas products, morcon begins with a selection of the very best ibérico pure-bred free-range pigs, who roam in the wide-open “dehesas” (meadows) in south-west Spain. The pigs are nourished on a rich, varied diet found naturally in the wild, focusing primarily on acorns during the “montanera” season (when mature acorns fall from the trees). It’s the acorns that infuse the meat with such unforgettable flavours, not to mention a high percentage of healthy oleic acid and omega oils.
Morcon comes in one entire piece weighing between 800 g and 1.2 kg.
Store in a cool, well-ventilated location until consuming. Serve at room temperature to maximise flavours and aromas.
Use a cutting board and a suitable knife to make thin slices. As the slices can be rather large it's best to cut each one into 3 separate pieces for an ideal presentation.
