PRODUCTION AND AGEING
Vines selected for their extreme quality and freshness. Each variety is harvested at the optimum moment and vinified separately. Short, cold macerations were carried out with the Tempranillo and Garnacha on their skins, always in an inert atmosphere.Once a subtle, elegant and pale colour was reached, the must was drawn off through the use of gravity.Each variety is fermented separately at low temperature (16ºC), to maximise the delicate aromas of each variety, in two types of small capacity vessels: Flextank® porous eggs and stainless steel.Once completed, partial malolactic fermentation is initiated in the Tempranillo and Garnacha varieties. Once this process has been completed the three varietals are blended and the wine is kept with the fine lees in suspension to give the wine softness, body and weight in the mouth.
