PRODUCTION AND AGEING
Hand harvested in crates with meticulous selection in the vineyard. Vatting at low temperature in small tanks, where the following takes place: bleeding off of the must to concentrate it, pre-fermentative and post-fermentative maceration, with a total of 28 days' skin contact. Malolactic fermentation in cement tanks. Aged for 32 months in new barrels made from extremely fine grained Allier and Troncais French oak. It is bottled and cellared for at least 48 months to be rounded off in complete peace and serenity.

TASTING NOTE
Colour: Clean with great intensity. Cherry red with highlights of a still purplish tone.
Aroma and flavour: Despite its long ageing in French oak barrels, it shows dominant black fruit notes blended with resinous notes and subtle spice.
It is silky on the palate, balanced, with a rich body and flavour intensity, delicate acidity and long, ripe tannins. A very persistent finish.
SERVING SUGGESTIONS
A wine with great ageing potential, which stands out for its complexity and the great richness of flavour and aromas.It brings together the necessary character to pair with rich, fatty dishes such as game, stews, charcuterie and mature cheeses such as Cabrales or Manchego.
Serving temperature: 18ºC - 20ºC.
