An enveloping, long and complex wine. It is produced using three kinds of grapes from different types of soil.

PRODUCTION AND AGEING: The Viura comes from bush vines of more than 60 years of age situated at more than 600m altitude in the Rioja Alta. The Tempranillo Blanco is grown on more clay-based soils and the Sauvignon Blanc comes from parcels on cool, chalky soils located in the most eastern area of the D.O. at more than 700 m altitude.Hand harvested. Each varietal is vinified completely independently. Destemming and subsequent vatting.Long macerations at a low temperature in contact with the skins to extract all the primary aromas.Very gentle pressing and subsequent cold settling of the must in an inert atmosphere to obtain a clean, richly aromatic must.Alcoholic fermentation in stainless steel tanks and flextanks at a very low temperature. Racking to new, gently-toasted French oak barrels to complete the fermentation process.

The Viura and Tempranillo Blanco undergo partial malolactic fermentation. Constant battonage in the barrels of the three varieties over four months to stir and suspend the lees, giving a glycerine texture in the mouth.Once this process has been completed, various tastings are carried out to define the final blend.

TASTING NOTE

Colour: Luminous, pale yellow with lemon-coloured highlights.

Aroma and flavour: It is intensely noble and elegant on the nose, with well-defined aromas of white flowers. As oxygen begins to have its effect, stone fruits and some resinous notes appear, before giving way to additional sweet notes that are seductive in their delicacy. Aromas of toasted bread and creamy notes.On the palate it has body and elegance, it is fresh with very good acidity that will extend its lifespan over several years. Harmonious, it leaves glimmers of white fruit along with notes of patisserie.
It has a long, glycerine finish, where oak plays the lead. An astonishingly complex wine, with great structure and elegance.

SERVING SUGGESTIONS

A very versatile wine in terms of food pairing due to its extraordinary complexity. A white wine with character, ideal for pairing with a great range of dishes, from fish and foie gras to meats, mature cheeses and even Iberian charcuterie, with a very long lifespan, with potential for evolving in the bottle.Serving temperature: 12ºC – 14ºC.
