CRAFTING & AGEING
Harvest was undertaken with a spirit of optimism across the region. One Rioja Alta estate near to the winery was selected, where the grapes enjoyed the necessary character, personality and exceptional quality needed to make this wine. The sloping vineyard is orientated towards the midday sun, with calcareous-clay soil and a great number of pebbles. Bush-trained and watered only by natural rainfall, the different vines of the aforementioned varieties are selected with rigour and dedication. The vines are monitored with great care throughout the whole cycle, and they are harvested selectively, picking only the best grapes, which are transported in small crates and pass along a selection table once again upon arrival at the winery.
Vatted in underground cement tanks, fermentation takes place at 28ºC after several days' cold maceration. Continuous pumping-over. Once alcoholic fermentation has taken place, the wine is macerated with its noble skins for more than two weeks, controlling its evolution through exhaustive tastings so that the transfer of tannins and aromatics is exactly in line with the profile defined by the winemaker. Once drained off, malolactic fermentation also takes place in underground tanks, protected from the low temperatures that usually start in November. Once MLF has taken place, the full-bodied and powerful wine is racked off into barrels. We choose the best, very fine-grained French barrels, selected in a tasting of more than 40 different samples. Barrel ageing extends over 62 months (more than five years) and after oak ageing is completed, it remains for a period in a small concrete tank with constant homogenization to combine all the tannins. Once bottled, it rests in the underground bottle cellar for more than nine years. Only 2,798 botlles crafted.
AWARDS AND RECOMMENDATIONS

Look: Intense. Medium-bodied ruby red. A small amount of colour precipitates due to its long bottle ageing.
Aroma & palate: aromatic intensity and a great deal of complexity. Upon first nosing it displays a torrent of spiced oak, liquorice sticks, black pepper and tobacco. These are followed by still powerful notes of very ripe black fruit and a light touch of pepper roasted in a wood oven. Its glycerine texture -both creamy and robust- envelopes the palate and transforms into silkiness and harmony on its passage through the mouth. Very long on the finish, the aftertaste is a delight, regaling us with the flavours and aromas of a very special wine.
SERVING & FOOD PAIRINGRed meats, game, Iberian cured meats and mature cheeses, among other things. Serving temperature: 18-19ºC.
