Our shoulder ham comes from the front leg of pure-bred 100% ibérico pigs who feed primarily on acorns. Made from a selection of the best pure-bred, free-range Iberian pigs from the Spanish meadows.
Storage:The shoulder ham should be kept in a cool, well-ventilated place. Remove the cover and the brown paper wrapping when you’re ready to enjoy the ham.Before carving for the first time, make sure you have all the materials you need: ham holder, knife sharpener, wide-blade knife for the first phase, and a long flexible ham knife for the next one. Leaving the carving area clean and protecting the area of the ham that was carved are both very important. The newly-carved sections of the ham should be covered with thin slices of ham fat to prevent exposure to the air. Remember that when the shoulder blade appears (the large, flat bone at the far end of the hoof), it’s important to make a deep incision with a small knife to separate the meat from the bone and guide further carving.
